Soft and chewy peanut butter cookies for St. Patrick’s day. These easy cookies are made with a box of cake mix and colored green with food coloring. Each cookie is also stuffed with a mini Reese’s peanut butter cup. Everyone will love the fun chocolate peanut butter surprise in each cookie.
The cookie dough is made by mixing a box of cake mix with peanut butter, eggs, vegetable oil, and green food coloring until combined. Place the cookie dough onto a large ungreased baking sheet, and place one peanut butter cup on each cookie dough. Cover with more dough, and bake until the cookies are fully cooked through.
Reese's Peanut Butter Cup Stuffed Peanut Butter Cake Mix St. Patrick's Day Cookies
Ingredients
- 1 ( 15 oz.) box yellow cake mix
- 1/2 cup peanut butter
- 2 large eggs
- 1/2 cup vegetable oil
- green food coloring
- mini Reese's peanut butter cups
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, peanut butter, eggs, and vegetable oil until smooth. Add in the green food coloring.
- Place the cookie dough onto a large ungreased baking sheet at least 2-inches apart. Place one peanut butter cup on each cookie dough, and cover fully with more cookie dough. Bake for 10-12 minutes.
