Soft and chewy peanut butter oatmeal cookies made with a box of vanilla pudding mix. And with a mini Reese’s peanut butter cup stuffed inside of each cookie. Everyone will love the soft and chewy texture of the cookies and the delicious chocolate peanut butter surprise in each cookie.
The cookie dough is made like a classic monster cookie dough, except for the addition of vanilla pudding mix. Roll each cookie dough into balls and flatten slightly. Place one peanut butter cup on each cookie dough and roll together into balls. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.
