Reese’s Peanut Butter Cup Stuffed Halloween Pudding Cookies

Soft and chewy sugar cookies made with a box of vanilla pudding mix, and made purple and orange, giving them a fun Halloween themed twist. Everyone will love the soft and chewy texture of the cookies and the delicious chocolate and peanut butter surprise in each cookie.

The cookie dough is made similar to a classic sugar cookie dough, except for the addition of vanilla pudding mix. Divide the cookie dough into two bowls, and mix one with orange food coloring and one with purple. Take a small amount of each cookie dough and roll together into balls. Flatten each one slightly and place one peanut butter cup on each cookie dough. Roll together into balls and place onto a large baking sheet. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • orange and purple food coloring
  • mini Reese's peanut butter cups

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Divide the dough into two bowls, mix one with orange food coloring and one with purple. Take a small amount of each cookie dough and roll into balls. Flatten slightly and place one peanut butter cup on each cookie dough.
  • Roll into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
