Soft and chewy chocolate chip cookies made green for the grinch and topped with mini heart shaped sprinkles. Each cookie is also stuffed with a mini Reese’s peanut butter cup. Everyone will love the fun Grinch theme of the cookies and delicious chocolate and peanut butter flavors.
The cookie dough is made similar to a classic chocolate chip cookie dough, except for the addition of green food coloring. Roll the cookie dough into balls and flatten slightly. Place one peanut butter cup in each cookie dough and roll into balls. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven and top with sprinkles.

- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter and both sugars until fluffy. Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined.
- Add in the green food coloring and fold in the chocolate chips. Roll the cookie dough into balls and flatten slightly. Place one peanut butter cup on each cookie dough and roll into balls. Place cookies onto a large ungreased baking sheet at least 2-inches apart.
- Bake for 10-12 minutes. Remove from the oven and top with sprinkles.
