Soft and chewy peanut butter cookie bars filled with tons of delicious mini Reese’s peanut butter cups. The cookie dough is made like a peanut butter cookie dough, but with peanut butter cups. These chewy and delicious cookie bars are perfect for any occasion. Everyone will love the tasty chocolate and peanut butter flavors.

The cookie dough for these bars is made like a classic peanut butter cookie dough, except with the addition of mini Reese’s peanut butter cups added to the cookie dough. Evenly press the prepared cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean in the center with a toothpick. Let cool completely before serving.

Reese's Peanut Butter Cup Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini Reese's peanut butter cups

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the mini Reese's peanut butter cups.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
