Soft and chewy cookie bars that are perfect for Valentine’s day. These quick and easy red velvet cookie bars have the delicious classic red velvet flavor. It is so quick and easy to make these bars, everyone will love them for a last minute Valentine’s day dessert or for a Valentine’s day party.

The cookie dough is similar to a sugar cookie dough, with the addition of cocoa powder to the cookie dough to give the cookie bars that classic red velvet flavor. Red food coloring is also added to the cookie dough, making them look like red velvet. The cookie dough is pressed into a greased square baking dish and baked until they come out clean with a toothpick. Let cool completely before cutting into bars and serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red food coloring

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In a large bowl, combine butter with granulated sugar and brown sugar until fluffy.
  • Add in egg and vanilla extract. Mix until smooth. Add in the flour mixture, and mix until it is fully combined. Add in red food coloring until it is fully red.
  • Press the cookie dough into a greased square baking dish. Bake for 15-20 minutes.
