These soft and chewy red velvet cookies with white chocolate chips in every bite is the perfect cookie for Valentines day. The base for these cookies uses a box of red velvet cake mix. The cake mix gives these cookies a classic red velvet flavor while making these cookies a little more cake like texture. They are quick to make with very little ingredients needed to create these cookies. Four ingredients with just a whisk and a bowl  is all that is needed to make these. They make the perfect Valentines day treat to make for Valentines day party or just as a fun treat.

The only ingredients that you need to make these cookies is a box of red velvet cake mix, vegetable oil, eggs and white chocolate chips. With these cookies, there is no need to use a mixer. You can mix the ingredients together in a large bowl with a whisk. Fold the white chocolate chips into the cookie dough with a spatula. I used white chocolate chips because I like the flavor it adds to the red velvet. But milk or dark chocolate chips would be great to use as well. Use a cookie scoop to drop tablespoonfuls of cookie dough onto ungreased baking sheet. Bake until the bottoms of the cookies are lightly browned.

Ingredients
  

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 ( 16 oz.) box red velvet cake mix
  • 1 cup white chocolate chips

Instructions
 

  • Preheat oven to 350 F. In a large bowl, whisk eggs and vegetable oil together.
  • Add in cake mix and whisk until a thick dough forms. Fold in white chocolate chips with a spatula.
  • Using a cookie scoop, place cookie dough 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
