Red Velvet Cake Mix Butterscotch Crinkle Cookies

Soft and chewy cookies made with a box of red velvet cake mix and filled with butterscotch baking chips. The cookies are also rolled in powdered sugar before baking, making them even more soft and chewy. They make the perfect easy treat for any occasion.

The only five ingredients that you need is a box of red velvet cake mix, eggs, vegetable oil, butterscotch baking chips, and powdered sugar. Mix all of the ingredients, except for the powdered sugar until smooth. Roll the cookie dough into balls and roll in the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

  • 1 ( 15 oz.) box red velvet cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup butterscotch baking chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the butterscotch baking chips. Place the powdered sugar into a shallow dish.
  • Roll the cookie dough into balls and roll in the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
