Soft and chewy chocolate brownies combined with a classic red velvet flavored cookie. These easy brookies combines these two delicious desserts. Brookies make a great dessert for when you can’t decide between a classic brownie or a soft and chewy cookie. These red velvet brookies are perfect to bake this Valentine’s day.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large bowl until smooth. You can also use a box of brownie mix instead and prepare it according to package directions. For the cookie dough, you can either make the classic red velvet cookie dough yourself, or you can use some premade red velvet flavored cookie dough instead. Pour the prepared brownie batter into a greased square baking dish. Top evenly with the cookie dough. Bake until the center comes out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red food coloring

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract and mix until smooth.
  • In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Add in the red food coloring and mix until it is fully red.
  • Pour the brownie batter into a greased 8-inch square baking dish. Evenly place the cookie dough over the brownie batter. Bake for 25-30 minutes.
