Pumpkin Pudding Cookies

Soft and chewy pumpkin cookies filled with pumpkin pie spice, and with a box of vanilla pudding mix whisked into the cookie dough. The pudding mix gives the cookies a more soft and chewy texture. Everyone will love these quick and easy pumpkin cookies this fall.

The cookie dough is made like a classic pumpkin cookie dough, except with the addition of vanilla pudding mix whisked into the flour mixture. Use a cookie scoop to place the prepared cookie dough onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Pumpkin Pudding Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk flour, pudding mix, salt, baking soda, and pumpkin pie spice together. In a large bowl, combine butter with pumpkin puree and both sugars until fluffy.
  2. Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Use a cookie scoop to place the cookies onto a ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
