Soft and chewy pumpkin cookie cups made with a box of vanilla pudding mix. The pudding mix makes these cookie cups more soft and chewy. Everyone will love the soft and chewy texture of the cookie cups and delicious pumpkin spice flavors this fall.
The cookie dough is made similar to a classic pumpkin cookie dough, except for the addition of vanilla pudding mix whisked into the flour mixture. Evenly divide the prepared cookie dough into a paper lined muffin pan, and bake until each cookie cup comes out clean with a toothpick.
