Pumpkin Pudding Chocolate Chip Snickerdoodle Cookies

Soft and chewy pumpkin snickerdoodle cookies made with a box of vanilla pudding mix and filled with chocolate chips. The pudding mix gives these easy cookies a more soft and chewy texture. Everyone will love the delicious pumpkin and chocolate flavors in these easy cookies this fall.

The cookie dough is made similar to a classic pumpkin cookie dough, except with the addition of vanilla pudding mix whisked into the flour mixture, and chocolate chips folded into the cookie dough. Roll the cookie dough into balls, and roll into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Pumpkin Pudding Chocolate Chip Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, baking soda, and pumpkin pie spice. In a large bowl, combine butter with pumpkin puree and both sugars until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
