The cookie dough is made like a classic pumpkin cookie dough, except with the addition of vanilla pudding mix, and chocolate chips folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.
Pumpkin Pudding Chocolate Chip Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 ( 3 oz.) box vanilla pudding mix
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, baking soda, and pumpkin pie spice. In a large bowl, mix together butter, pumpkin puree, and both sugars until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips.
- Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
