Soft and chewy cookies filled with tons of delicious pumpkin pie flavors, and chocolate chips. These easy cookies are made more soft and chewy with the addition of a box of vanilla pudding mix in the cookie dough. Everyone will love these easy delicious pumpkin chocolate chip cookies for a fun fall treat this year.

The cookie dough is made like a classic pumpkin cookie dough, except with the addition of vanilla pudding mix, and chocolate chips folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Pumpkin Pudding Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, baking soda, and pumpkin pie spice. In a large bowl, mix together butter, pumpkin puree, and both sugars until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips.
  • Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
