And with chocolate chips folded into the cookie dough. Evenly divide the cookie dough between a paper lined muffin pan. Bake until each cookie cup comes out clean with a toothpick.
Pumpkin Pudding Chocolate Chip Cookie Cups
Ingredients
- 1/2 cup butter, softened
- 1/2 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 ( 3 oz.) box vanilla pudding mix
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, pudding mix, salt, baking soda, and pumpkin pie spice. In a large bowl, combine butter with pumpkin puree and both sugars until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Fold in the chocolate chips. Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
