Easy brownies topped with pumpkin sugar cookie dough. Everyone will love the chewy classic chocolate brownie combined with the delicious pumpkin cookie dough baked on top. These easy brownie cookies make the perfect fall themed dessert.

The brownie batter is made like a classic brownie batter. Spread it out into a greased square baking dish. The pumpkin cookie dough is made similar to a sugar cookie dough, except for the addition of pumpkin puree, and cinnamon. Top the brownie batter with the cookie dough, and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk flour, sugar, cocoa powder, salt, and baking soda together. Add in melted butter, eggs, and vanilla extract and mix until smooth.
  • Spread the brownie batter into a greased 8-inch square baking dish. In a medium bowl, whisk together flour, salt, baking soda, and cinnamon. In a large bowl, mix together butter, sugar, and pumpkin puree until fluffy.
  • Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Top the brownie batter with cookie dough and bake for 25-30 minutes.
