Pineapple Cake Mix White Chocolate Chip Snickerdoodle Cookies

Soft and chewy snickerdoodle cookies made from a box of pineapple cake mix, and filled with white chocolate chips. These easy chewy cookies are so quick and easy to make. Everyone will love the sweet pineapple flavors along with the white chocolate flavors in these easy cookies.

The cookie dough is made by mixing a box of pineapple cake mix with eggs and vegetable oil until smooth. Fold in the white chocolate chips. Roll the cookie dough into balls, then roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box pineapple cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup white chocolate chips
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the white chocolate chips.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
