The cookie dough for these cookies is made with a classic sugar cookie dough. But you can also use a refrigerated sugar cookie dough instead for these. Roll the cookie dough into balls, and flatten each one slightly. Place one peppermint patty onto each piece of dough, and roll into a ball, covering the candy completely. Place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
Peppermint Patty Stuffed Sugar Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter and sugar until fluffy.
- Add in the egg and vanilla extract, mix until smooth. Add in the flour mixture, and mix until the dough is fully combined. Roll the cookie dough into balls, and place one unwrapped peppermint patty onto each piece of dough.
- Roll into a ball, and place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
