To make the chocolate cookie dough, it is just like making a classic sugar cookie dough, except cocoa powder is added to the dough. Roll the cookie dough into balls, and flatten each one slightly. Place one peppermint patty candy onto each piece of dough, and roll the cookie dough into balls. Place them onto a large ungreased baking sheet at least 2-inches apart. Bake until the center comes out clean.
Peppermint Patty Stuffed Chocolate Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In a large bowl, combine the butter and sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Roll the cookie dough into balls, and flatten each slightly.
- Place one unwrapped peppermint patty onto each piece of dough. Wrap the dough completely around it and form into a ball. Place the cookies onto a large ungreased baking sheet and bake for 10-12 minutes.
