Creamy and cheesy mashed potato bake made with shredded pepper jack cheese. And topped off with crispy french fried onions. These easy mashed potatoes make the perfect side dish for any holiday meal, like Easter, Christmas, or Thanksgiving dinner as a cheesy alternative to classic mashed potatoes.
The potatoes are first boiled until they are fork tender. Drain the potatoes, and mash them with butter, seasonings, and 1/2 of the shredded pepper jack cheese. You can mash the potatoes using either a potato masher, or a mixer for a smoother mashed potato. Spread the mixture into a greased round 9-inch baking dish. Top the potatoes with the remaining shredded pepper jack cheese and the french fried onions. Bake until the cheese is fully melted and the onions are crispy and lightly browned.
Pepper Jack Mashed Potato Bake
Ingredients
- 2 pounds russet potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup shredded pepper jack cheese
- 1 ( 6 oz.) container french fried onions
Instructions
- Preheat the oven to 400 F. Place the cubed potatoes into a large saucepan and cover with water. Cook over medium heat until fork tender. Drain potatoes, and place into a large bowl.
- Mash the potatoes with the butter, salt, pepper, and 1/2 cup shredded pepper jack cheese until smooth using either a potato masher or mixer. Spread the potatoes out into a greased round baking dish.
- Top with the remaining pepper jack cheese and fried onions. Bake for 15-20 minutes.
