The cornbread batter is made like a classic cornbread, except with the addition of shredded pepper jack cheese. Spread the batter into a greased round pie plate and bake until the top is lightly browned. Serve warm topped with butter.
Pepper Jack Cornbread
Ingredients
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 large egg
- 1 cup milk
- 1/3 cup vegetable oil
- 1/2 cup shredded pepper jack cheese
Instructions
- Preheat the oven to 400 F. In a large bowl, whisk together flour, cornmeal, sugar, salt, and baking powder. Add in the egg, milk, and vegetable oil until smooth. Fold in the cheese.
- Spread the mixture into a greased round 9-inch pie plate. Bake for 20-25 minutes.
