Pepper Jack Cornbread

Fluffy homemade cornbread filled with delicious pepper jack cheese. This easy and cheesy cornbread makes the perfect side dish to go along side any meal this winter, such as a bowl of chili or soup. Everyone will love the fluffy texture and delicious pepper jack flavors.

The cornbread batter is made like a classic cornbread, except with the addition of shredded pepper jack cheese. Spread the batter into a greased round pie plate and bake until the top is lightly browned. Serve warm topped with butter.

Pepper Jack Cornbread

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup shredded pepper jack cheese

Instructions
 

  • Preheat the oven to 400 F. In a large bowl, whisk together flour, cornmeal, sugar, salt, and baking powder. Add in the egg, milk, and vegetable oil until smooth. Fold in the cheese.
  • Spread the mixture into a greased round 9-inch pie plate. Bake for 20-25 minutes.
