To save on time, you could even use pre-made chocolate chip cookie dough instead of making it yourself. These cookies are perfect to bake around the holidays, or anytime during the year.
The dough for the chocolate chip cookies is made like a classic chocolate chip cookie dough. And the peanut butter filling is made similar to making peanut butter balls. Once both the cookie dough, and the peanut butter filling are made, roll the chocolate chip cookie dough into large balls, and flatten slightly. Take a tablespoon on the peanut butter filling, and place in the center of the cookie dough. Roll tightly into a ball, and place onto a large ungreased baking sheet. Bake until the cookies are fully cooked through in the center. Let cool completely on a cooling rack before serving.
Peanut Butter Stuffed Chocolate Chip Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1/2 cup butter, softened
- 1 cup peanut butter
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In another large bowl, combine softened butter with sugar until fluffy.
- Add in egg and vanilla extract, mix until smooth. Add in the flour mixture, and mix until a thick dough forms. Fold in chocolate chips.
- For the peanut butter filling, in a large bowl, combine softened butter with peanut butter and powdered sugar until a thick dough forms.
- Roll cookie dough into balls, and flatten slightly. Roll peanut butter dough into balls, and place each one over a piece of chocolate chip cookie dough.
- Roll the cookie dough over the peanut butter filling, form into a large ball. Place cookies onto a large ungreased baking sheet at least 2-inches apart.
- Bake for 10-12 minutes.
