The dough for these cookies is made like a classic snowball cookie, except with the addition of peanut butter added to the dough. The prepared cookie dough is rolled into balls, and placed onto a large baking sheet. Bake until the are lightly brown on the bottom. Place powdered sugar into a shallow dish, and roll each cookie into the powdered sugar. Set them onto a cooling rack to cool completely before serving.
Peanut Butter Snowball Cookies
Ingredients
- 1/2 cup butter
- 1/2 cup powdered sugar
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350 F. In a large bowl, combine butter with peanut butter and powdered sugar. Mix until it is fluffy. Add in the vanilla extract, and mix until smooth.
- Add in the flour, and mix until it is fully combined. Roll the cookie dough into balls, and place at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
- Place the remaining 1/2 cup powdered sugar into a shallow dish. Roll each baked cookie into the powdered sugar. Let cool completely on cooling racks.
