Peanut Butter Snickerdoodle Witch Hat Cookies

Soft and chewy peanut butter cookies rolled in a delicious mixture of granulated sugar and ground cinnamon, giving them a snickerdoodle flavor, and topped with icing and a chocolate kiss to make them look like witch hats. Everyone will love these easy cookies this Halloween season.

The cookie dough is made like a classic peanut butter cookie dough, except that it is rolled into balls and rolled in a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven and top with icing and chocolate.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • red icing
  • chocolate kisses

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt and baking soda. In a large bowl, mix together butter, peanut butter, and both sugars until fluffy. Add in the egg and vanilla extract and mix until smooth.
  2. Add in the flour mixture, and mix until combined. In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls and roll in the cinnamon sugar mixture. Place cookies onto a large ungreased baking sheet at least 2-inches apart.
  3. Bake for 10-12 minutes. Remove from the oven and top with icing and chocolate kisses.
