Peanut Butter Snickerdoodle Cookies

Soft and chewy snickerdoodle cookies filled with tons of delicious peanut butter flavor. This cookies combines both a chewy peanut butter cookie with a sweet snickerdoodle cookie. The peanut butter cookie dough is rolled into a mixture of cinnamon and sugar before it is baked to give them the traditional snickerdoodle cookie flavor. These cookies make the perfect Christmas cookie, or to enjoy anytime of the year.

The cookie dough is started like a classic peanut butter cookie dough, with the addition of cream of tartar to give them the classic snickerdoodle flavor. The cookies are then rolled into a mixture of cinnamon and granulated sugar. Place them onto a large baking sheet at least 2-inches apart and bake until the center comes out clean. Let cool on cooling racks before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, and cream of tartar. In a large bowl, combine butter, peanut butter, and both sugars until fluffy.
  • Add in egg and vanilla extract, mix until smooth. Add in the flour mixture, and mix until it is fully combined. Combine sugar and cinnamon in a shallow dish.
  • Roll the cookie dough into balls, and roll each one into the cinnamon and sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
