Peanut Butter Oatmeal Rolo Blossom Cookies

Peanut butter blossom cookies are a favorite for the holidays, but instead of traditional peanut butter blossom cookies, these cookies are made with a soft and chewy peanut butter oatmeal cookie dough. And instead of using a classic chocolate kiss to top them with, they are topped off with a chocolate rolo instead. It is a fun and delicious way to enjoy a classic Christmas cookie with a twist. Bake these cookies this Christmas season for tasty twist on a classic.

The cookie dough for these cookies, are a mix of a classic soft peanut butter cookie, and a chewy traditional oatmeal cookie. The butter is mixed with peanut butter and both granulated and brown sugar, and mixed with a mixture of flour and quick oats. Roll the prepared cookie dough into balls, and place them at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes. Remove the cookies from the oven, and top each one with an unwrapped chocolate Rolo candy. Let them cool completely before serving.

Peanut Butter Oatmeal Rolo Blossom Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Rolos

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter, peanut butter, and both sugars. Mix until fluffy.
  2. Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until a thick dough forms.
  3. Roll the cookie dough into balls, and place them at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes. Remove from the oven and top each one with a unwrapped Rolo candy.
