The cookie dough for these cookies, are a mix of a classic soft peanut butter cookie, and a chewy traditional oatmeal cookie. The butter is mixed with peanut butter and both granulated and brown sugar, and mixed with a mixture of flour and quick oats. Roll the prepared cookie dough into balls, and place them at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes. Remove the cookies from the oven, and top each one with an unwrapped chocolate Rolo candy. Let them cool completely before serving.
Peanut Butter Oatmeal Rolo Blossom Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup all-purpose flour
- 2 cups quick oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- Rolos
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter, peanut butter, and both sugars. Mix until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until a thick dough forms.
- Roll the cookie dough into balls, and place them at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes. Remove from the oven and top each one with a unwrapped Rolo candy.
