They are baked in muffin pans instead of as cookies. They are the perfect single serving size bites to bake for a group of people. Everyone will love these delicious cookie cups for every occasion.

The dough for these cookie cups are made like a peanut butter cookie dough, with the butter and peanut butter mixed together along with both granulated and brown sugars. A mixture of flour and oatmeal are added to give these cookies the same chewy texture of a classic oatmeal cookie. Divide the cookie dough between the prepared muffin pan and bake until the dough comes out clean with a toothpick. Let cool completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. Line a 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, quick oats, salt, and baking soda. In a large bowl, combine softened butter with peanut butter, and both sugars. Mix until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until fully combined. Evenly divide the cookie dough into the paper liners. Bake for 15-20 minutes.
