Peanut Butter Halloween Cookie Bars

Soft and chewy peanut butter cookie bars filled with fun Halloween themed sprinkles. These easy chewy cookie bars have all of the classic peanut butter cookie flavors, with a fun and festive Halloween look with the sprinkles. Everyone will love the soft and chewy texture of the bars and the delicious peanut butter flavors.

The cookie dough is made similar to a classic peanut butter cookie dough, except with the addition of Halloween themed sprinkles folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Peanut Butter Halloween Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Halloween sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and both sugars until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
