Peanut Butter Christmas Sprinkle Cookies

Soft and chewy peanut butter cookies rolled with red and green colored sprinkles. Everyone will love the soft and chewy texture of the cookies and classic peanut butter cookie flavors. And the fun red and green Christmas colors. They make the perfect easy treat to bake this Christmas season.

The cookie dough is made like a classic peanut butter cookie dough. Then roll into balls and roll each one in the red and green sanding sugar. Place cookies onto a large ungreased baking sheet and bake until the cookies are fully cooked through.

Peanut Butter Christmas Sprinkle Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red and green sanding sugar

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt and baking soda. In a large bowl, combine butter with peanut butter and both sugars until fluffy. Add in egg and and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined.
  • Place red sanding sugar into a shallow dish. Place green sanding sugar into another shallow dish. Roll the cookie dough into balls and roll each one into one of the sugars. Place cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
