Peanut Butter Chip Cookie Cups

Soft and chewy peanut butter cookie cups filled with peanut butter baking chips. The added peanut butter chips give these easy cookie cups even more of a delicious peanut butter flavor. Everyone will love these easy chewy cookie cups for any occasion.

The cookie dough is made similar to a classic peanut butter cookie dough, except with the addition of peanut butter baking chips mixed into the cookie dough. Evenly divide the cookie dough between the prepared paper liners. Bake until each cookie cup comes out clean with a toothpick.

Peanut Butter Chip Cookie Cups

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter baking chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the peanut butter baking chips.
  • Evenly divide the cookie dough between the prepared paper liners. Bake for 12-15 minutes.
