The cookie dough is made similar to a classic peanut butter cookie dough, except for the addition of peanut butter baking chips folded into the cookie dough. Press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.
Peanut Butter Chip Cookie Bars
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup peanut butter baking chips
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar and brown sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the peanut butter baking chips.
- Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
