Soft and chewy peanut butter cookies for St. Patrick’s day made with a box of cake mix and made green with food coloring. The cookies are also rolled in a dish of powdered sugar before baking, making them even more soft and chewy. Everyone will love these easy peanut butter cookies this St. Patrick’s day.

The cookie dough is made by mixing a box of cake mix with peanut butter, eggs, vegetable oil, and green food coloring until combined. Roll the cookie dough into balls and roll in a dish of powdered sugar. Place the cookies onto a large ungreased baking sheet. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 1/2 cup peanut butter
  • 2 large eggs
  • 1/2 cup vegetable oil
  • green food coloring
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, peanut butter, eggs, and vegetable oil until smooth. Add in the food coloring. Place the powdered sugar into a shallow dish.
  • Roll the cookies into balls and roll in the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
