Peanut Butter Apple Cookie Bars

Sweet and chewy peanut butter cookie bars filled with cinnamon and diced apples. Peanut butter and apples make the perfect flavor combination. These cookie bars are so chewy and delicious, they make a great dessert for any fall occasion. They would even be great served with Thanksgiving.

The dough for these cookies is prepared just like classic peanut butter cookies, except with the addition of diced apples, and instead of made into cookies, they are baked into bars. The cookie dough is started with mixing flour with salt, baking soda, and cinnamon. The butter is mixed with peanut butter and brown sugar until it is fluffy. Egg and vanilla extract are added until smooth. Gradually add in the flour mixture, mixing until all of the flour is fully combined. Fold in diced apples, and press the cookie dough into a greased square baking dish. Bake until the center comes out clean with a toothpick. Let cool before cutting into bars.

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 large apple, diced

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, and cinnamon.
  • In a large bowl, mix butter with peanut butter and brown sugar until fluffy. Add in egg and vanilla extract. Mix until smooth. Add the flour mixture in two parts, mixing well until a thick dough forms.
  • Fold in diced apples. Press the cookie dough into a greased 8-inch square baking dish. Bake for 25-30 minutes. Cut into bars.
