I love french toast for lazy weekend mornings, but that can be time consuming waiting for each individual piece of bread. But with a french toast casserole, you get all of the tastes of french toast but made much simpler. This overnight french toast casserole is made overnight, so in the morning all you need to do is bake it. This is great for a weekend breakfast, or for holiday breakfasts because it can easily feed a crowd. Serve warm with maple syrup.

French bread is used, cut a loaf into large cubes to get 10 cups. Spread the bread cubes into a large greased baking dish. In a large bowl, whisk eggs, milk, brown sugar and ground cinnamon together. Pour evenly over the bread cubes. At this point, you can cover it and refrigerate for at least 8 hours or overnight. Refrigerating the french toast overnight brings all of the flavors together. For the topping, cut butter into flour, brown sugar and cinnamon until crumbly. Refrigerate it until morning. In the morning, remove the pan from the fridge and let it come to room temperature, sprinkle with the topping. Bake the casserole for 50 minutes for a softer texture, more like bread pudding. Or bake for 1 hour for a more firm texture.

Ingredients
  

  • 10 cups cubed french bread
  • 8 large eggs
  • 2 cups milk
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

Ingredients for the Topping

  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • In a large greased baking dish, place bread cubes. In a large bowl, whisk together eggs, milk, brown sugar and ground cinnamon. Pour the egg mixture over the bread cubes.
  • Cover and refrigerate overnight. Preheat oven to 350 F. For the topping, in a small bowl, cut flour, brown sugar and cinnamon into butter until crumbly. Sprinkle over the french toast. Bake for 50-55 minutes.
