Easy roasted smoked sausage and tender potatoes make the perfect quick and easy dinner. The sausage and potatoes are seasoned with paprika to add a little spice. And then they are roasted in the oven until they are browned and tender. There are many different ways that you can serve this meal. You can serve it by itself with a side of rice and vegetables. Or you can serve the sausage and potatoes wrapped up in a tortilla and eat it like a taco.

Smoked sausage is used for this meal, and sliced into small round slices. I used peeled and diced russet potatoes, although you can also use red potatoes or your favorite type of potatoes. You can also add in any other vegetables that you would like, such as asparagus or green beans. The sausage and potatoes are mixed with olive oil, salt, pepper and paprika. And baked until the sausage is lightly browned and the potatoes are fork tender.

Oven Roasted Sausage and Potatoes

Ingredients
  

  • 14 oz. smoked sausage
  • 4 medium russet potatoes, peeled and diced
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika

Instructions
 

  • Preheat oven to 375 F. Slice sausage into round slices. Peel and dice potatoes into 1-inch cubes. Combine sausage and potatoes in a large baking dish.
  • Mix with olive oil, salt, pepper and paprika. Bake for 40-45 minutes.
