Fresh okra is one of my favorite summer vegetables, they are delicious and have tons of nutritional benefits. Okra is a good source of vitamins A and B, meaning even more of a reason to enjoy this vegetable. There are many ways that you can cook okra, but my favorite method for cooking vegetables is to roast them in the oven. This is a quick and healthy side dish that is ready on the table in 30 minutes.
To prepare the okra, it needs to be sliced into 1-inch pieces. Mix the okra with olive oil and seasonings. To season the okra, I used salt, pepper, ground cumin, paprika and garlic powder. The ground cumin and paprika gives the okra a spicy flavor, although you can use any other seasonings that you want if you want a different flavor. Spread the okra out into a baking dish and roast in the oven until the okra is crispy and lightly browned.
Oven-Roasted Okra
Ingredients
- 1 pound okra, sliced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 400 F. Cut okra into 1-inch pieces. Mix okra with olive oil and seasonings.
- Spread okra out into a baking dish. Bake for 25-30 minutes.
