Oreo Peanut Butter Cookies

Soft and chewy peanut butter cookies filled with crushed Oreo cookies. The peanut butter flavor of these cookies goes perfectly with the chocolate flavor of the Oreo cookies. They are so quick and easy to make, and are a fun twist on a classic peanut butter cookie. These cookies are perfect for any holiday or any occasion.

The cookie dough is started with a classic peanut butter cookie dough, then the crushed Oreo cookies are added into the cookie dough. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are cooked fully, and let them cool on a cooling rack completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the crushed Oreo cookies.
  • Roll the cookie dough into balls, and place them at least 2-inches apart onto a ungreased baking sheet. Bake for 10-12 minutes.
