Oatmeal Raisin Pudding Cookie Bars

Soft and chewy cookie bars with oatmeal and raisins. Vanilla pudding mix is also added to the cookie dough to make the cookie bars more soft and chewy. They have all of the classic oatmeal raisin flavors. Everyone will love these easy chewy cookie bars for any holiday or occasion.

The cookie dough is made like a classic oatmeal raisin cookie dough, except for the addition of dry vanilla pudding mix whisked into the cookie dough. Press the cookie dough evenly into a square baking dish. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Oatmeal Raisin Pudding Cookie Bars

Ingredients
  

  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix together butter and both sugars until fluffy. Add in egg and vanilla extract and mix until smooth.
  2. Add in the flour mixture and mix until it is fully combined. Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
