Soft and chewy oatmeal cookie bars filled with delicious raisins. These cookies are made just like a classic oatmeal raisin cookie, but made into bar form instead of cookies. These oatmeal raisin cookie bars make the perfect easy dessert for just about any occasion. It takes just a few minutes to put together, and you have a soft and warm cookie bar filled with delicious oatmeal and raisins.

The cookie dough is made like a classic oatmeal cookie dough, with the addition of raisins added into the cookie dough. The prepared cookie dough is pressed into a greased square baking dish and baked until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Oatmeal Raisin Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy.
  2. Add in egg and vanilla extract and mix until it is smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the raisins.
  3. Press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
