Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup quick oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup butterscotch baking chips
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the butterscotch baking chips.
- Evenly press the cookie dough into the paper liners. Bake for 12-15 minutes.
