Oatmeal Butterscotch Cookie Bars

Soft and chewy oatmeal cookie bars filled with butterscotch baking chips. These easy chewy oatmeal cookie bars make the perfect easy treat to bake for just about any occasion. Everyone will love the chewy texture of the cookie bars and delicious butterscotch flavors.

The cookie dough is made similar to a classic oatmeal cookie dough, except with the addition of butterscotch baking chips mixed into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Oatmeal Butterscotch Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch baking chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the butterscotch baking chips. Evenly press the cookie dough into a greased square baking dish. Bake for 20-25 minutes.
