Monster Pudding Cookies

Soft and chewy peanut butter oatmeal cookies with a box of vanilla pudding mix and filled with chocolate chips and M&Ms. They have all of the classic flavors of a classic monster cookie, but made more soft and chewy with the pudding mix. They make the perfect treat for any occasion.

The cookie dough is made like a classic monster cookie dough, except for the addition of dry vanilla pudding mix. Roll the cookie dough into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Monster Pudding Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup M&Ms
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar and brown sugar until fluffy.
  • Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined. Fold in the chocolate chips and M&Ms. Roll the cookie dough into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
