Monster Pudding Cookies

Soft and chewy peanut butter oatmeal cookies with a box of vanilla pudding mix and filled with chocolate chips and M&Ms. They have all of the classic flavors of a classic monster cookie, but made more soft and chewy with the pudding mix. They make the perfect treat for any occasion.

The cookie dough is made like a classic monster cookie dough, except for the addition of dry vanilla pudding mix. Roll the cookie dough into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup M&Ms
  • 1 cup chocolate chips

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar and brown sugar until fluffy.
  2. Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined. Fold in the chocolate chips and M&Ms. Roll the cookie dough into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
