Part oatmeal cookie, part peanut butter cookie, part m&m cookie and part chocolate chip cookie creates the monster cookie. These are the perfect holiday cookie, they are soft, chewy and delicious. Great for the holiday baking season to give as gifts or just to bake. If you don’t want to bake them right away, you can freeze the cookie dough. To freeze them, roll the cookie dough into balls and place them into large plastic bags. Freeze and when you are ready to bake, place how many ever cookie dough balls onto a ungreased baking sheet and bake as usual.
Flour, old-fashioned oats, salt and baking soda are combined for the dry ingredients. Softened butter and peanut butter are creamed together with both granulated sugar and brown sugar. They are creamed with a mixer until light and fluffy. Eggs and vanilla are added to mixture until smooth. The dry ingredients are added in three separate additions, beating after each addition until the mixture is fully combined. Gently fold in m&ms and chocolate chips into the dough.
Cover the cookie dough and refrigerate it for at least one hour. I like to refrigerate cookie dough before I bake them, because it helps them not spread as much in the oven. After the dough has chilled, roll the dough into balls using either a cookie scoop or your hands. Place them onto an ungreased baking sheet and press the dough with a fork in a criss cross pattern. Bake for 10-12 minutes until they are cooked through.
