Soft and chewy gingerbread cookies filled with chocolate m&ms. These cookies are perfect for baking this winter. They have all of the delicious flavors of a classic gingerbread cookie in a soft and chewy cookie. The m&ms go perfectly with the flavor of the gingerbread in these cookies. Everyone will love this fun twist on gingerbread cookies.

The dough for these cookies is made with a classic soft gingerbread cookie dough. The m&ms candy is folded into the cookie dough and rolled into balls. Place the cookies onto a large ungreased baking sheet. Bake until they come out clean in the center. Let the cookies cool on a wire rack completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup m&ms

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves. In another large bowl, combine butter, both sugars, and molasses until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the m&ms.
  • Roll the cookie dough into balls, and place at least 2-inches apart onto an ungreased baking sheet. Bake for 10-12 minutes.
