Easy buttery classic shortbread cookies with a delicious mint flavor. These easy buttery shortbread cookies make the perfect easy treat to bake this holiday season. Or even for a fun St. Patrick’s day themed dessert. Everyone will love the classic shortbread texture and delicious mint flavors.

The cookie dough is made similar to a classic shortbread cookie, except for the addition of mint extract and green food coloring. Roll the cookie dough into balls and flatten each one slightly. Place the cookies onto a large ungreased baking sheet. Bake until the bottoms of the cookies are lightly browned.

Mint Shortbread Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon mint extract
  • 2 cups all-purpose flour
  • green food coloring

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together butter and powdered sugar until smooth. Add in the mint extract. Mix in the flour until it is fully combined.
  • Add in the food coloring, and mix until it is fully green. Roll the cookie dough into balls, and flatten slightly, place onto a large ungreased baking sheet. Bake for 10-12 minutes.
