The cookie dough is made similar to a classic shortbread cookie, except for the addition of mint extract and green food coloring. Roll the cookie dough into balls and flatten each one slightly. Place the cookies onto a large ungreased baking sheet. Bake until the bottoms of the cookies are lightly browned.

Mint Shortbread Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon mint extract
  • 2 cups all-purpose flour
  • green food coloring

Method
 

  1. Preheat the oven to 350 F. In a large bowl, mix together butter and powdered sugar until smooth. Add in the mint extract. Mix in the flour until it is fully combined.
  2. Add in the food coloring, and mix until it is fully green. Roll the cookie dough into balls, and flatten slightly, place onto a large ungreased baking sheet. Bake for 10-12 minutes.
