Soft and chewy mint cookie bars filled with mint flavored M&Ms and crushed Oreo cookies. These easy cookie bars make the perfect easy dessert to bake this St. Patrick’s day or any other occasion. Everyone will love the soft and chewy texture, and the delicious mint and chocolate flavors.
The cookie dough is started out similar to a classic sugar cookie dough, except that instead of vanilla extract, mint extract is used instead. Mint M&Ms and crushed Oreo cookies are also folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.
Mint Oreo M&M Cookie Bars
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon mint extract
- 1 cup mint M&Ms
- 1/2 cup crushed Oreo cookies
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, and mix until smooth.
- Add in the flour mixture, mix until it is fully combined. Fold in the M&Ms and crushed Oreo cookies. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
