Mint M&M Crinkle Cookies

Soft and chewy mint cookies filled with mint chocolate M&Ms, and rolled in powdered sugar before baking. The powdered sugar makes the cookies more soft and gives them a crinkle look after they have baked. These easy mint cookies are perfect to bake for a fun St. Patrick’s day themed dessert.

The cookie dough is started similar to a classic sugar cookie dough, except that instead of vanilla extract, mint extract is used instead. Fold mint M&Ms into the cookie dough. Roll the cookie dough into balls, then roll each one into a dish of powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Mint M&M Crinkle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • 1 cup mint M&Ms
  • 1/2 cup powdered sugar

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, and mix until smooth.
  2. Add in the flour mixture, mix until it is fully combined. Fold in the M&Ms. Place the powdered sugar into a shallow dish.
  3. Roll the cookie dough into balls, then roll into the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
