Soft and chewy green mint cookies rolled in powdered sugar giving them a crinkle look and making them more soft and chewy. Everyone will love these easy and delicious cookies for St. Patrick’s day or any other occasion treat.
The cookie dough is made like a classic sugar cookie dough, except instead of vanilla extract, mint extract is used. Green food coloring is also used. Roll the cookie dough into balls and roll in a dish of powdered sugar. Place the cookies onto a baking sheet and bake until they are fully cooked through.

Mint Crinkle Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon mint extract
- green food coloring
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix butter with sugar until fluffy. Add in egg and mint extract and mix until smooth.
- Add in the flour mixture and mix until combined. Add in the food coloring. Place powdered sugar into a shallow dish and roll the cookie dough into balls and roll in the powdered sugar.
- Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
