These cookies are made like a classic mint chocolate chip cookie, then it is rolled into a mixture of cinnamon and sugar, giving these cookies a delicious snickerdoodle flavor. The cookie dough is made like a classic mint chocolate chip cookie dough. Then it is rolled into balls, and each one is rolled into a shallow dish of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet, and bake until the cookies are fully cooked through.

Mint Chocolate Chip Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract. Mix until smooth.
  2. Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring until it is fully green. Fold in the chocolate chips. In a shallow dish, combine granulated sugar and ground cinnamon.
  3. Roll each cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
