The cookie dough is made similar to a classic shortbread cookie, except instead of vanilla, mint extract is used, and the dough is mixed with green food coloring. Fold in the chocolate chips. Roll the cookie dough into balls and flatten each one slightly. Place the cookies onto a large baking sheet. Bake until the bottoms of the cookies are lightly browned.
Mint Chocolate Chip Shortbread Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon mint extract
- 2 cups all-purpose flour
- green food coloring
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together butter and sugar until smooth. Add in the mint extract. Add in the flour, and mix until it is fully combined.
- Add in the food coloring and mix until it is fully green. Fold in the chocolate chips. Roll the cookie dough into balls, and flatten slightly. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
