Mint Chocolate Chip Oatmeal Cookie Bars

Soft and chewy oatmeal cookie bars with a delicious mint flavor, and filled with chocolate chips. These cookie bars taste just like a classic mint chocolate chip cookie, but combined with a oatmeal cookie bar. These cookie bars would make the perfect dessert to bake this year for St. Patrick’s day. Everyone will love the oatmeal cookie texture, combined with the mint chocolate flavor.

The cookie dough is started like a classic oatmeal cookie dough, then mint extract is added and the dough is colored green. Chocolate chips are also folded into the cookie dough. Press the dough into a greased square baking dish. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Mint Chocolate Chip Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring and mix until it is fully green. Fold in the chocolate chips.
  • Press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
